We finally tried the “light” pizza at Berberé, the pizzeria now located in the Alce Nero space. The pizza is “light” because the long fermentation of the sourdough (up to 48 hours) makes the pizza easier to digest. I have to say, I definitely felt lighter than usually after eating my pie. I didn’t get that bloated feeling I sometimes get after eating pizza. My pizza was topped with cima di rape, ricotta, and olives. It’s pricey for pizza but the ingredients are top-notch and it doesn’t leave you feeling weighed down.
